Quick & Easy Dinner Ideas Series: Indonesian Beef Satay Skewers with Peanut Satay Sauce Recipe

Satay skewers are a favourite in our house, and they are very versatile. You can serve them with rice and stir fried vegies for a main meal, or serve smaller versions on toothpicks for cocktail parties.

Indonesian Beef Satay Skewer Marinade Recipe Ingredients

  • 1kg rump steak, fat removed and cut into 3cm cubes
  • 1/2 brown onion, finely diced
  • 1 clove garlic, crushed or finely diced
  • 5 tbsp kecap manis (a thick sweet Indonesian soy sauce)
  • 2 tbsp peanut oil
  • 1/2 tsp salt
  • Shaving of palm sugar, or 1 tsp of brown sugar
  • 1 tsp ground corriander

Indonesian Beef Satay Skewer Marinade Recipe Method

Mix the marinade ingredients together in a large bowl and toss in beef. Stir to allow marinade to penetrate all beef cubes, then cover with cling wrap and refrigerate until needed; you can do this the night before and allow to marinade overnight, however if you don’t have much time, 30 minutes should be sufficient.

Indonesian Peanut Satay Sauce Recipe Ingredients

  • 400g roasted, salted peanuts (shells removed)
  • Water
  • 1 tbsp peanut oil
  • 1 tsp ground coriander
  • 1/2 brown onion, finely diced
  • 1 clove garlic, crushed or finely diced
  • 1 small red chilli, finely chopped
  • 200ml coconut cream
  • 2-3 tbsp kecap manis
  • 1/2 tsp salt
  • Shaving of palm sugar, or 1 tsp of brown sugar
  • Juice of 1/2 lime

Indonesian Peanut Satay Sauce Recipe Method

Place the peanuts in a food processor and blitz with enough water to form a firm paste. In a wok or large frypan, heat the peanut oil and lightly fry the onion, garlic and chilli until golden. Add the peanut paste and cook, stirring, until heated and fragrant. Add the coconut cream, kecap manis, salt, palm sugar and lime, then cook for a further minute or so until slightly thickened. Set aside until ready to serve.

Thread the marinated beef onto skewers. If you want to serve the individual meat pieces on toothpicks for a cocktail party, cook the meat as it, then spike each piece with a toothpick once cooked. BBQ the skewers or meat pieces on a preheated BBQ hot plate, turning often, until cooked and tender; they should still be slightly moist and pink on the inside.

Serve skewers with plenty of warm peanut satay sauce served over them, or individual meat pieces on toothpicks, with warm peanut satay sauce for dipping.
