Top 5 Deserts in 5 Minutes: Number 5: Fruit Salad with Yoghurt and Crunchy Nuts Recipe

I have decided to put together a series on the top 5 deserts that can be made in 5 minutes, and will publish these, once a week, for the next 5 weeks (starting at number 5). These deserts are easy to make, incorporate ingredients that you (probably) have on hand, and can be made in under 5 minutes! Perfect for when you are entertaining, or want something sweet and delicious in a hurry.

Fruit Salad with Yoghurt and Crunchy Nuts Recipe Ingredients

  • Fruit (we tend to use, depending on the season, kiwi fruit, strawberries, blueberries, pineapple, oranges, apples, mango, pear, nectarines, grapes, watermelon, peaches, passionfruit etc, but use whatever you have on hand)
  • 1 heaped tbsp creamy deli style yoghurt per person (Harris Farm does a great own brand one)
  • Large handful slivered almonds (or you could use roughly chopped macadamia nuts)
  • 2 tbsp caster sugar

Fruit Salad with Yoghurt and Crunchy Nuts Recipe Method

Chop the fruit into bite sized pieces, place in individual serving bowls and top with scoops of yoghurt. Heat a small nonstick fry pan over medium heat. Add the almonds and sugar and cook, stirring, until the sugar has dissolved and the nuts are golden (the nuts will clump together with the sugar). Allow to cool slightly, then scatter across the top of each bowl.
