Quick & Easy Dinner Ideas Series: Dippers & Platters

dippers-platter-hommus-vegetables-olives-chicken-skewersThis is more an idea than an actual recipe, but given just a few ingredients, you can have dinner on the table in minutes. We change whatever we put on the platter depending on our mood, but use whatever you have on hand, or can easily pick up on the way home. The best thing about this is that everyone can serve themselves and it is a great way to introduce kids to new tastes.

Dippers Platter Ingredients

  • Thinly sliced ham off the bone, salami, Prosciutto or any other cold meat that everyone likes
    (approximately 2 slices per person)
  • BBQ’ed chicken (1 chicken feeds approximately 4-6 people)
  • Hardboiled eggs (approximately 1/2 to 1 egg per person)
  • Brie, a good bitey cheddar, goats or blue cheese, again whatever everyone likes (serve approximately 50 grams per person)
  • Hommus (either a good quality bought one – we are lucky to have a great Lebanese restaurant across the road that does take away – or make your own, see our recipe)
  • Sundried tomatoes, chargrilled eggplant/capsicum or marinated artichokes/mushrooms (approximately 50 g per person)
  • Olives (small handful per person)
  • Best quality olive oil & balsamic vinegar (look for products bearing the ‘Aceto Balsamico Tradizionale di Modena’ mark)
  • Salad leaves (Handful per person)
  • Lebanese cucumber, sliced (1 cucumber serves approximately 4 people)
  • Avocado, sliced (1 avocado serves approximately 4 people)
  • Cherry or Grape tomatoes (small handful per person
  • Grapes (small bunch per person)
  • Strawberries (3-4 per person)
  • Lebanese bread, Turkish bread or Sourdough sliced into bite sized pieces (couple of slices per person)

Dippers Platter Method

To serve, take your largest serving platter and arrange the cold meats, eggs, chicken and cheese on the platter. Place olives, hommus, olive oil and balsamic vinegar and sundried/marinated/chargrilled vegetables into separate serving dishes and add to the platter. Make a quick green salad with the salad leaves, cucumber, avocado and tomatoes and dress lightly with a drizzle of olive oil and squeeze of lemon juice. Place in a bowl or directly onto the serving platter.

Finish the platter with the bunches of grapes and strawberries and serve the bread in a basket with the platter. Give everyone their own plates and cutlery and dig in!
