Healthy Fresh Fruit Salad Recipe

You might think it is silly to include a recipe for fruit salad, however there are just so many versions out there that contain rock melon and honey dew… and not much else (apart from the odd soggy strawberry). The most important thing is to have fresh fruit that is in season (from your local greengrocer, not supermarket).

There is no point in trying to use mango in the middle of winter; the flavour won’t be the same as a beautiful ripe summer mango, it will cost you an arm and a leg and it may well have traveled halfway round the globe to land on your plate.

This is a very refreshing, light and healthy desert.

Fresh Fruit Salad Recipe Ingredients

  • Kiwi fruit
  • Berries (strawberries, blueberries, raspberries etc; whatever berries are in season and cheap)
  • Cherries (pitted to remove seeds)
  • Mango
  • Passionfruit
  • Orange
  • Grapes
  • Pineapple
  • Whatever else is in season (Spring/Summer) that takes your fancy

Fresh Fruit Salad Recipe Method

Peel the skin off the kiwi, orange, mango and pineapple with a sharp knife. Cut into slices, segments and wedges (depending on the type of fruit) and place into a salad bowl. Sprinkle with berries and grapes (remove from stalks). Cut passionfruit in half and scrape seeds/juice out over salad. If you want, you could sprinkle the salad with a dash of fruit liqueur (for an adult fruit salad).

Gently toss the salad and allow flavours to develop for 1/2 an hour (keep at room temperature, but if it is a really hot day, then place in fridge and pull out 10 minutes prior to serving to allow to return to room temperature).

Serve with yoghurt, icecream, whipped/thick cream and sprinkle with toasted chopped nuts (almonds or cashews are good).
